Pumpkin a Plenty!

It is finally fall! It's a time of expectation, thanksgiving, bonfires, and sweets of course! For me, I always look forward to making anything with pumpkin in it. I called all the grocery stores and behold, Wal-Mart had the first batch of these little orange friends. After a quick and mouthwatering brainstorm I decided that these would be the perfect sweet to bring to White House First Baptist's 100th year anniversary!! Here's the first of many sweets this fall season with my favorite squishy squashy fruit... or is it a vegetable? Either way, it's my favorite. When you bite into these Pumpkin Cupcakes with Cream Cheese frosting you'll never be the same aaaah! AND it's REAL PUMPKIN. None of that canned imposter! 

Here's the recipe, but...I always add a secret ingredient or two!

save these if you like roasting seeds...post to follow

scoop out all the goop, you know!

NO GOOP!



fill your double boilder up half way with water and steam away

break up the pumpkin if you need to. i didn't even break one nail!



get over to your sink and separate the seeds from the gush

it's cookin!

it's ready when it looks like candy corn. organge, white, yellow


mix the sugar and oil

add eggs

measure out all the dry ingredients


add dry ingredients a little at a time

let it cool or grab a big spatula to get it out and scrrape!


scrape the pumpkin away from skin




mash with a fork to even out texture

measure 15 ouces

add slowly to mixture

use a measuring cup to avoid a mess and get the exact amount in each cupcake


Another tip: if you ever have empty cup cake spots then fill the spot up with a little water to keep the other cupcake edges from burning. CRAZY! 
bake and coool on a rack...

here comes the icing on the cake


melt me for a few seconds in the microwave

  1. Your photos are so amazing. Feels like a movie when you scroll through. So you boiled your pumpkin? That's a great idea I bake them in the oven for an hour, turned upside down on aluminum foil.

  3. hey momma... thanks! yeah i did the tags, they were fun! and with the double boiler it only took 20 minutes!! quick!
