The Breaking Bread Part: Holy Cinnamonny

Well, I can't have a blog titled Breaking Bread without making some bread to break. All I had to do was open up my Momma's good ol' Cake Box Bakery Cookbook and there it was staring at me; Cinnamon Bread!

Not just any cinnamon bread; the family bakery kind with all the memories attached... and I helped!! I even got my name in the paper!
I wanted to make cinnamon rolls with it first but then I considered the cream cheese frosting, holidays coming up, and how many calories that entails. (like cinnamon bread is good for you anyway?) If you have a whole day to make this, go for it. You won't need that scented candle to smell up your house for fall, just pop this baby in the oven! As long as you start with patience, butter, milk, and yeast, you can't go wrong.
Ingredients
  • GLAZE: Four Tablespoons Lemon Juice or Orange Juice
  • 1 cup or more Powdered Sugar
  • BREAD: 1 cup Milk
  • Stick of Butter
  • 2-½ teaspoons Active Dry Yeast
  • 2 whole Eggs
  • ⅓ cup Sugar (or more)
  • 3-½ cups Flour
  • 1 teaspoon Salt
  • ⅓ cup Dark Brown Sugar
  • 2 Tablespoons Cinnamon
  • Egg And Milk mixed to brush on top
  • Softened Butter to smear on pan
  • A Kitchen Aid Mixer!!

Preparation Instructions


Preheat oven to 350 degrees. Melt butter with milk.


Cool until warm, not hot. Sprinkle yeast on top, stir gently, let stand 10 minutes.
Combine flour and salt. In the bowl of an electric mixer, mix sugar and eggs. (make sure eggs aren't the scary ones)
Pour in milk/butter/yeast mixture, stir. Add half the flour, beat on medium speed then add the other half. Prepare for your counters to get dusty! I have the guards for the mixer but it's more fun to make a mess!
Arrrrg Maty! Time to get out the hook! Get out the dough hook attachment and knead dough on medium speed for ten minutes. If dough is sticky, add more flour as you go.
Heat a large non-plastic mixing bowl in the microwave for three minutes. Drizzle in a little veg oil, then toss the dough in the oil.
Cover bowl in plastic wrap and set it in a warm place for at least 2 hours.
After 2 hours roll the dough out onto a floured wax paper sheet.
Make a neat rectangle no wider than the loaf pan, maybe 18 to 24 inches long.
Smear with 2+ TBS melted butter.
Mix dark brown sugar and cinnamon, sprinkle evenly over the wet dough. Don't even think about using the white stuff... dark brrrrown mmm!
Roll dough toward you, keeping it tight then pinch the seam together.
Smear loaf pan with softened butter.
Place dough, seam down, in the pan. Cover with plastic wrap again and let it rise for 2 hrs.
Mix a little egg with milk, and smear over top. Bake for at least 40 minutes on middle rack. So pretty!
Remove from the pan and allow bread to cool.
Make the glaze and sling across bread.
