Ginger Dressing Goodness
My original intent was to blog about Jude's trip to East Tennessee with my parents but, that memory card is at the church tonight haha. So, I am excited to tell you about this recipe for ginger dressing! Blake and I enjoy Japanese food so much that we make a couple "authentic" recipes from time to time. You may remember these Japanese noodles that we made before from the Pioneer Woman's website. SO GOOD. Some of the ingredients are similar in this dressing.
We love having this dressing when we go out to eat so I figured hey, if it will help us eat more salad then why not? It is so good on veggies, a sandwich, anything! I have made it twice already and we just gobble it up. The only ingredient that I didn't have at home already was called miso paste. I found it online for about five dollars-not bad at all. It's basically the Japanese salt and pepper since they use it in everything; fried rice, soup, chicken, dressings, you name it. Blake LOVES it so much that he's already cooked with it in his famous stir fry two times. Blake is so sweet! Blake and our friend Kendall made dinner for me and Kendall's wife Jennifer one night about two weeks ago! Jennifer had no idea that it was happening so it was a nice surprise. It was so fun to hear them chatter as they prepared the meal, "so, what do you do with the chicken?" haha. They did a great job, it was so tasty fellas! Even though I was not allowed to cook, I did contribute some of this yummy dressing since it went along with the meal.
For some reason, we didn't get a picture of the guys with their wonderful meal that they made but we did get this cute shot of Ryleigh and Jude! This was on our way to Monell's in Gallatin. We received a gift card to go eat there from some friends at church so, we took Kendall and Jennifer with us since Jennifer hosts dinner for us ALL THE TIME at our small group. They are so awesome, we will definitely miss them when we move to Florida. Crazy! Jennifer and I were in third row while we took this fun picture. Good times!
What exactly is miso paste? It's fermented rice, barley, and soy. I know it sounds totally disgusting but when you smell it, you'll be hooked. It's like Japanese flavor in a paste. It's filled with vitamin A, C, protein, fiber, and salt! I was sure to use the low sodium version of this paste and low sodium soy sauce too. I hope you enjoy!
Ingredients:
2 whole carrots diced
1/4 large sweet onion
1/3 cup of ginger - peeled and diced
2 Tbs dark sesame oil
2 Tbs rice wine vinegar ( more if you like it soupier)
1 Tbs sugar, brown sugar, stevia, OR honey
2 Tbs low sodium soy sauce
2 ounces miso paste
Place all ingredients in blender or food processor and blend until very pureed. Toss with your favorite salad!
