Recent Eats

Florida has inspired me to eat a little cleaner, try new recipes, and share old recipes with new friends. After all, eating is so much more enjoyable when you have other people around the table with you to share life with. To start, I took a little trip to Aldi and found a great sale on squash! I usually cook squash on the skillet with the usual italian seasonings such as olive oil, onion, garlic, salt, pepper, maybe some cheese, tomatoes, or breadcrumbs. However, I had more squash than I knew what to do with! I enjoy making squash casseroles but that defeated the purpose of trying to eat a healthy side dish real quick.  So, I remembered a recipe I saw in a magazine for a Summer Squash and Ricotta Galette ( recipe here ). It's similar to a quiche but with less egg. My sweet mother-in-law was in town too and I knew she would help me eat this! It was so tasty and good for you! You should try it the next time you find your refrigerator with an overload of squash!  ...

Oh, little man. My cup runneth over! Each day I thank the Lord for giving us you! God loves you so much! It's been so much fun getting to know you more each day! Daddy and I just stand back in amazement at all of your new developments! You practice new words all the time like your "I love you" phrase, "kitty cat," and "hello." I try to talk to you all day as we transition from one activity to another. You're no longer interested in that bottle of yours! We have to wrestle you to sit still and eat! You'd much rather pick up food all by yourself! We still feed you some oat cereal, yogurt, and blended veggies sometimes since you still make a mess when you pick up food. You love to pick up Cheerios, carrots, peas, broccoli, beans, olives, and anything that you see on the floor. You crack us up when you crawl from one room to another, stop, and then face plant on the floor. You want to taste everything! You drink out of two big boy cups now an...
